This week, we're going with one-pot dinners. Not to put too fine a point on it, but in some recipes, the pot is a skillet or a pan. Jenna says I'm overthinking it - everyone gets it ๐. Less pots to wash and, bonus, all the recipes make great leftovers. We're also sharing a few tips for baking. Baking requires a lot more precision than cooking so good rules of thumb can go a long way. As soon as the cool weather blows in, I ease into it by making a super moist banana bread which I never get tired of. It's still one of our top 3 most popular recipes.

Tips for baking ๐๐ฉWith cooking, you can wing it here and there. With baking, you can't. You have to be more precise. If you search top baking sites for tips, you will find they all tell you pretty much the same thing. Here are a few key ones. Get all your ingredients ready before you start. Read the recipe carefully before you start. Important! Always preheat your oven before baking to ensure even cooking and consistent results. Buy an oven thermometer (they are cheap). Most ovens are off by at least 25 degrees f. Measure correctly. Use a spoon to scoop dry ingredients into a measuring cup, then level it off (this is called the 'spoon and sweep' method). Invest in an inexpensive kitchen scale to measure your ingredients. Use the right pan size as indicated in the recipe to ensure your baked goods cook evenly. Using a smaller or larger pan can affect the baking time and final results. Don't overmix the batter or your baked goods will be tough and dense. Often the instructions will say to mix the batter just until the flour is incorporated. How to tell when a cake is done. King Arthur Baking (a reliable site) says to look for these 5 things - 1. edges of cake pull away from the pan 2. smells fragrant 3. top and edges are golden brown 4. toothpick comes out clean, and 5. cake springs back when pressed gently.
