One pot dinners. Essential baking tips.

Hi Reader,

This week, we're going with one-pot dinners. Not to put too fine a point on it, but in some recipes, the pot is a skillet or a pan. Jenna says I'm overthinking it - everyone gets it ๐Ÿ˜‰. Less pots to wash and, bonus, all the recipes make great leftovers.

We're also sharing a few tips for baking. Baking requires a lot more precision than cooking so good rules of thumb can go a long way. As soon as the cool weather blows in, I ease into it by making a super moist banana bread which I never get tired of. It's still one of our top 3 most popular recipes.

As always, hope you find something you like!

Hearty Beef and Vegetable Stew (A One Pot Meal)

Thereโ€™s nothing like tucking into a cozy, old-fashioned beef and vegetable stew on a chilly weekend. Tender chunks of beef, carrots, celery, onions and potatoes in a rich, beefy gravy โ€“ a one-pot meal with everyday ingredients. The best. 2 hours 15 minutes.

One Pot Dinners

Smothered Chicken With Vegetables

Smothered chicken is one of my favorite comfort foods - I've been making it for over 30 years. Tender, juicy chicken smothered in onions, carrots, celery, peppers and spinach and a yummy sauce โ€“ all in one skillet. 1 hour 10 minutes.

Pumpkin Risotto (Instant Pot)

This rich, creamy, flavor-packed Pumpkin Risotto recipe in the instant pot is a knockout vegetarian dinner for Fall or Winter. Substitute butternut squash if you canโ€™t find pumpkin. 40 minutes.

My Husbandโ€™s Best Stovetop Chili

Every year, my husband begs me to make chili, hoping it will taste like the stovetop chili he remembers as a kid. I finally nailed it. Itโ€™s a thick hearty chili recipe โ€“ medium spicy โ€“ with a good meat-to-tomato balance. 1 hour 50 minutes.

Veal Stew with Wine, Zest and Thyme

Plump tender morsels of veal in a rich sauce of wine, tomatoes, thyme, garlic, carrots and onions, brightened with lemon zest and freshly chopped parsley. That pretty much describes veal stew with wine, zest and thyme. Except for the deliciousness part. 1 hour 40 minutes.

Easy Bourbon Chicken Mall Recipe (20 minutes)

Delicious! Put this on your blog!โ€ said my enthusiastic husband after the first bite. So here it is โ€“ an easy bourbon chicken mall recipe just like you get at the food court. A quick simple dinner. Oops, sorry - you need to buy or make the rice separately! 20 minutes.

Creamy Orzo Pasta with Spinach (15 Min, One Pot)

Youโ€™ll want to try this creamy orzo pasta with spinach if youโ€™re looking for a quick, vegetarian, family-friendly, easy dinner idea with good nutrition. 15 minutes.

Tips for baking ๐ŸŽ‚๐Ÿฉ

With cooking, you can wing it here and there. With baking, you can't. You have to be more precise. If you search top baking sites for tips, you will find they all tell you pretty much the same thing. Here are a few key ones.

Get all your ingredients ready before you start.

Read the recipe carefully before you start. Important!

Always preheat your oven before baking to ensure even cooking and consistent results.

Buy an oven thermometer (they are cheap). Most ovens are off by at least 25 degrees f.

Measure correctly. Use a spoon to scoop dry ingredients into a measuring cup, then level it off (this is called the 'spoon and sweep' method). Invest in an inexpensive kitchen scale to measure your ingredients.

Use the right pan size as indicated in the recipe to ensure your baked goods cook evenly. Using a smaller or larger pan can affect the baking time and final results.

Don't overmix the batter or your baked goods will be tough and dense. Often the instructions will say to mix the batter just until the flour is incorporated.

How to tell when a cake is done. King Arthur Baking (a reliable site) says to look for these 5 things - 1. edges of cake pull away from the pan 2. smells fragrant 3. top and edges are golden brown 4. toothpick comes out clean, and 5. cake springs back when pressed gently.

What can I say other than WOW!! Brought these to a dinner party as an appetizer paired with tzatziki and the whole thing was gone within minutes! My kids who eat nothing but mac nโ€™ cheese were even digging in! Definitely saving this recipe! Jill
